Banda ko achar of Nepal / Pattagovi ko achar:
Banda ko achar is probably the most popular and loved food in Nepal. It is real to Nepal and delighted in by all ethnic networks in Nepal from terai , slopes to mountains . It is very healthy vegetables, made generally with aloo, radish ,carrot, onion, chilly, which is very delicious. In Nepal, when we have excess these achar or in another laungage we can say best vegetables before winter, we usually make this achar any time we want. And as well in festivel , celebration ,party an so on. In my family all family love this achar any time in lunch ,dinner and breakfast as well.
Ingredients for Banda ko achar:
Banda – 1 Kg
Sesama seeds – 1/2 cup
Meethi (fenugreek seeds) – 1 tbsb
Kasmiri mirch / Red chili powder – 1/2 tbsp
Inexperienced recent chili – 2
Turmeric powder – 1/2 tbsp
Cumin powder – 1/2 tbsp
Mustard oil – 1/4 cup
Lemon / nibu – 1
Some shredded recent Coriander
Salt as per your choice.
Instruction:
1 .Cut cabbage in your choice.
2 .Boil potatoes, peel it and chop.
3 .And also chop onion.
4 .Broil sesame seeds (Teel) (half cup) on a dish till it becomes light earthy colored and starts snapping, after which crush it in a food processor
5 .Take one bowl , put cabbage and add the potatoes too.
6 .Put chopped onion on same bowl
7 .Add the ground sesame seeds and salt to taste in it.(You may add spot of Asafoetida)
8 .Warmth half cup of oil in griddle and add around 30 – 40 methi seeds till it becomes a striking shade of brown and 1/5 of turmeric powder
9 .Add cut green chilies (around 6 – 9 relying upon your taste) light fry chilies for 20 seconds
10 .Turn off gas and mix that oil in all material. If you mix the mixture of hot oil in this stage then the cabbage ,potato, onion and sesame seed. It will taste very delicious .
11 .Now mix achar with clean hand.
12 .Take one plate and serve it .
